This fabulous fundraising cookbook was created about 16 years ago (possibly the year 2000) by the Caerlaverock and Glencaple Church Kirk Session (for the Organ Fund). It is full of tried and tested recipes handed down through generations of families living in the parish. We are also treated to a delicate scattering of illustrations and tidbits of interest and history about our special area.
We have reproduced it here (with thanks and permissions from Sue Greig) so that you can enjoy it too and try out the recipes! I wonder if there’s some familiar names amongst the contributors. Do let us know!

With spring time comes a new season of forging and we have made our own Caerlaverock nettle soup using fresh nettle sprigs (picked with gloves!).
Nettle Soup
You will need:
Gloves and a bag!
Nettle tips (the tips and first two or four leaves are best)
Onion (or ramsons/ wild garlic – which isn’t so easily found around Caerlaverock)
Potatoes
Butter or oil
Vegetable stock
Salt and Pepper to taste
Method:
Chop potatoes into cubes. Saute onion then stir through rinsed nettle tips and potatoes. Add vegetable stock and gently simmer until the potatoes are soft. You can either serve chunky (with a swirl of cream) or blend.
A distinctly delicious soup, good fun to pick and make with children, full of vitamins and flavour!
